This is wonderful. I'm not a student of the medium, but was instantly drawn to his hidden hand. What's missing... why is it hidden.... I think art should provoke thought. This piece does a marvelous job. I look forward to more.

Beutiful

The guy has a very Slavic-looking face, like a Russian or a Pole. His expression lends the feeling that he is a hard-working and serious person.

Really nice character-wise. Great face, excellent expression, very clean, well-textured. The instruments of his trade look very good. That scale, the cleaver in his hand and the chopping-block look photo-realistic.

Only criticism is that it looks a little too clean. Those yellow-brown smears on his apron could be a little darker, and the shirt (especially the sleeves) is a bit clunky. The metal blades and the knife-honer could have a little bit more contrast--they are little too pale for being in so near a background. But those are minor details.

Some meat on the table might add some interest, although I can also see why you chose to leave out this unnecessary and perhaps cliched element.
